• 1 Dozen Large Eggs
  • 1/2 Red Capsicum Chopped
  • 1 Large Broccoli Flowerette (can use any vegetables)
  • 1 Large Onion Chopped
  • 1 Cup Grated Cheese
  • 3/4 cup Almond Meal
  • Pepper
  • Pinch Salt


  • 1 Cup Grated Cheese
  • 6 short cut Bacon chopped and slightly pan fried
  • 1/4 cup chopped Chives
  • 1-2 Sliced Tomato to decorate


  • Chop the Short Cut Bacon and slightly fry off in a fry pan and set aside.
  • Grease large Casserole or Pie Dish with butter.
  • Chop the Capsicum and Broccoli and place evenly over the bottom of your pie
  • Mix all other ingredients (except the topping ingredients) in a large mixing bowl and pour over the Capsicum and Broccoli. You may need to spread it evenly over the dish and pushing down vegetables that are not covered with the mix.
  • Cover the top with the Chopped Chives, Cheese, Bacon and then the sliced Tomato.
  • Bake in an over at 180 degrees until cooked and slightly brown.
  • Eat immediately or cut and freeze. Can be reheated if needed.
