Ingredients

3 cups riced cauliflower (excess water squeezed out in paper towels)

3 rashers bacon, diced and fried

1 small onion, diced and fried with the bacon

½ cup baby spinach leaves

5 eggs

1 cup grated tasty cheese

1 clove crushed garlic (or ½ tsp garlic powder)

Salt and pepper to taste

¼ cup chopped parsley Cayenne pepper

5-8 cabbage leaves, blanched or steamed for a few minutes to soften

Method

  1. Combine all filling ingredients together and fry off until cooked in a non-stick pan.
  2. Roll a portion of filling in a cabbage leaf.
  3. Place in steaming basket and steam for about 10-15 minutes till cooked.
